During significant festive occasions, residents of Gaoming district in Foshan prefer indulging in Lai Fun (Thick Rice Noodles), making it a substantial dish during the Chinese New Year celebrations.



Crafting a bowl of delectable Lai Fun requires careful attention to many details," says Sister Ping. It is crucial to control the temperature, as excessively high temperature can result in overcooking the rice noodles.




Approximately 30 minutes into the process, the 'lai' (pouring) step is initiated. Sister Ping uses a 'lai dou' to transfer the rice batter into a boiling pot of hot water, passing through evenly distributed, appropriately sized small holes. Once cooked, Lai Fun is carefully scooped out, undergoing steps such as 'passing through cold river' and air-drying to achieve the desired smooth texture.
