电饭煲焗鸡

Rice Cooker Baked Chicken

 

 

食材

主料:光鸡1只

调料:姜片8片、葱10克、盐焗鸡粉1包20克、食用油5克、盐6克、沙姜粉2克

 

Ingredients

Main ingredient: 1 chicken

Seasoning: 8 slices of ginger, 10 grams of green onion/scallion, 20 grams of salted chicken powder, 5 grams of cooking oil, 6 grams of salt, 2 grams of sand ginger powder

 

做法

1、挖清鸡内脏,并冲洗干净鸡内外。

2、整鸡用盐焗鸡粉、盐、沙姜粉擦匀,鸡腔内塞入少许姜片和葱。腌制20分钟。

3、在准备好的干净电饭煲煲胆内涂上少许油。

4、把姜片平铺在电饭煲内,将腌制好的鸡放入。

5、打开电饭煲开关,调至煮饭档位焗。鸡的每一面焗4~5分钟,四面依次翻转焗,共约16~20分钟。

蛋香虾球

食材

主料:大虾500克、咸蛋5个

调料:盐5克、鸡粉5克、淀粉50克、蛋清10克、食用油500克、黄油10克

 

Ingredients:

Main ingredients: 500 grams of shrimp, 5 salted eggs

Seasoning: 5 grams of salt, 5 grams of chicken powder, 50 grams of starch, 10 grams of egg white, 500 grams of cooking oil, 10 grams of butter

 

做法

1、剥去大虾的头和壳,在虾背中间顺切一刀,取出黑色的虾线,洗干净,用干毛巾吸干水分,便成虾球。

2、虾球加盐和鸡粉拌匀腌制5分钟。

3、把咸蛋蒸熟,取出蛋黄,稍烘烤出油,压碎待用。

4、虾球用蛋清拌匀,沾上淀粉,放进160度热油中炸至酥脆,捞出沥干油。

5、洗净锅,加入黄油,放进咸蛋黄,边加热边搅拌至咸蛋黄化开,加入炸好的虾球均匀沾上咸蛋黄上盘,上盘后撒上少许咸蛋黄粉末即可。

盐水菜心

食材

主料:菜心500克、红椒丝5克、姜丝5克、清水200克

调料:盐5克、味精2克、食用油15克

 

Ingredients

Main ingredients: 500 grams of green tender, 5 grams of red pepper, 5 grams of ginger, 200 grams of water

Seasoning: 5 grams of salt, 2 grams of sodium glutamate, 15 grams of edible oil

 

做法

1、菜心清洗干净备用。

2、倒进适量的清水,水量要多,没过菜心,大火煮开加入油、盐后,放入菜心煮熟,沥干水分,放入碟内摆整齐。

3、热锅下油,爆香红椒丝和姜丝,加水调味后,淋入摆整齐的菜心即可。

Ingredients

Main ingredients: 1 fresh fish (about 600 grams)

Seasoning: 10 grams of sliced ginger, 10 grams of shallot strips, 20 grams of steamed fish and soy sauce, 10 grams of shredded red pepper, 5 grams of shredded ginger, 20 grams of shredded green onion, 10 grams of peanut oil

 

做法

1、鲜鱼刮鳞,去内脏,去鳃,洗净。

2、椭圆碟上平铺葱条,放上整条鲜鱼,放上姜片。

3、烧热锅,放清水,待水烧滚后,将鲜鱼放入,盖好盖子,蒸10分钟,将姜片和葱条取出扔掉,并将碟中多余的水分倒掉。

4、将红椒丝、姜丝和葱丝放在鱼身上,撒上胡椒粉,用烧热的油淋上,放蒸鱼豉油即可。

Ingredients

Main ingredients: 300 grams of beef balls, 300 grams of fish balls, 1000 grams of soup, 50 grams of seaweed, 5 grams of fried garlic, 5 grams of parsley

Seasoning: 10 grams of fish sauce, 3 grams of pepper, 3 grams of sodium glutamate

 

做法

1、将牛肉丸和鱼丸用上汤煮滚,放入紫菜。

2、在汤碗内加入鱼露、味精。

3、将煮好的汤冲入汤碗内,放入炸蒜头粒和香芹粒,并撒上胡椒粉即可。
