A classic Chinese New Year wouldnt be complete without the lingering taste on your taste buds. Everyone has a taste of his hometown in his memory, and for Gaoming people, the taste is Gaoming Rice Noodle. Nowadays, the local government is seeking more opportunities to introduce the specialty to the rest of the world.
After three monthsdiscussion, Gaoming Market Supervision Bureau, Restaurant Industry Association, and professional culinary schools and restaurants formulated jointly the standardized production process of Gaoming Rice Noodle and the Group Standard of Gaoming Rice Noodles was released on 30th September, 2021.
How to make a bowl of standard Gaoming Rice Noodles?
Soak rice with 20-25℃ cold water. The ratio of water to rice is 1.5:1. Soak the rice for about 2-3 hours and then dry it for later use. Also prepare cold half-cooked rice.
Mix the soaked rice and half-cooked rice in a ratio of 5:1 and then put them into the grinder. Dry the ground rice.
Place the rice in a bowl and gradually add boiling water at 80-90℃. The ratio of rice and water should be 3:4. Then stir clockwise for about 15-20 minutes until the rice paste can be pulled into strips.
Pour the rice paste into a bowl with small holes at the bottom and it will flow into the pot with 65-70℃ water in it. When the rice paste becomes rice noodles, scoop it up, put it into a basin with cold water and drain the water.
Put the rice noodles into boiled water for about 5-8 seconds, then remove and put it into a bowl. Drizzle with soup and add some cooked ginger, shredded cabbage and fried peanuts. Finally a bowl of Gaoming Rice Noodle is done.
