Jun'an Steamed Pig
Featured in the popular documentary series "A Bite of China", Jun'an steamed pig has gained national fame. This signature dish starts with selecting a free-range pig weighing around 100 pounds, with a balanced proportion of fat and lean meat. After slaughtering, the pig is marinated for two hours, then spread out in a special cedar box and steamed over high heat.
When the pig is about 70% cooked, the excess fat is removed using a nail brush to reduce greasiness. Cold water is then used to shock the meat, enhancing its texture. The result is tender, flavorful meat with a delicate, melt-in-your-mouth fat layer.
