Taste and stories behind Lecong Fish Curd | Foshan Bite

Listed as “City of Gastronomy” by UNESCO in 2014, Shunde has been a place where numerous delicacies were created, in which Lecong is a place that stands out with a famous local dish - Lecong Fish Curd. 

 

Fish Curd got its name from one interesting story. It is said that in Shajiao Village Lecong Town, a daughter saw her father disappointed with salted fish, and then she formulated this new cuisine to please his appetite.  

 

 

Today, Lecong Fish Curd has become one of the most wanted dishes in Shudne, which demands very high cooking techniques. 

 

Started from well-selected ingredients, Lecong Fish Curd uses the fresh and tender smashed carp. After mincing them, the chef will blend it thoroughly with corn flour and egg. The last step is to fry it with mild fire. Once finished, the dish will be covered in golden skin and tastes good.  

 

 

Apart from the delicious taste, Lecong Fish Curd is super adoptable in every cooking method like braising, soup making, etc. Therefore, it will appear on the menus of every local restaurant.
