Foshan Gaoming's Classic Delicacy: Kudzu Flour Pancakes

In Zehe Village, Genghe Town, Gaoming District, there is a woman named Nong Huaming who married into the village. After working away from home with her husband for many years, they recently returned to the countryside and operated a small farm. They use local ingredients to make some innovative dishes, which are pretty popular among kids. Kudzu Flour Pancake (called "Pucheng扑撑" in Chinese) is one of her signature snack.


A Staple Ingredient: Kudzu Flour


Preparing the Batter


For a serving of four, she uses fivespoonfulsof kudzu flour, one spoonfuls of coconut powder, one spoonfuls of sesame seeds, two spoonfuls of glutinous rice flour, and two eggs. She mixes these with cold water to make a smooth batter. After heating oil in a flat pan, she pours in a tablespoon of the batter, spreading it thinly. Once the pancake sets, it's time to add the filling.

"Breadcrumbs give a nice texture. You could also used crushed biscuitsas substitute," Nong says. She adds fruit, carrots, pork floss, cooked meat, or a sprinkle of sugar. The Pucheng can be sweet or savory, depending on personalpreference.

Kudzu Pucheng is not only a classic cuisine, but also a local culture symbol in Gaoming. Traditionally, newlywed brides prepare these pancakes with their aunts-in-law on their first day in their new home, symbolizing supporting the family together. During the year-end celebrations, a sweet pancake is “offered”to the God of Kitchen, hoping to bring good fortune in the coming year.
